Honey Harvest - Three Daughters & Co

This honey has a story, and it starts in our strawberry field.

Our 35 beehives live on the same land as our strawberries, our dahlias, and our peonies. All season long our bees forage across our Minnesota farm and the wildflowers, clover, and goldenrod that surround it — gathering nectar from the same soil we tend with our own hands, on the same land we found and knew immediately was ours.

What they make out there in those hives is something that could only come from this exact place.

Raw Minnesota wildflower honey. Unfiltered and unheated — nothing removed, nothing added, nothing standing between you and what our bees made. The flavor changes subtly with the season and with what's blooming on our land — lighter and floral in early summer when the clover is at its peak, deeper and richer in late summer when the goldenrod comes in. Every jar is a small portrait of a specific moment on our farm.

We will not rush this. We are in our first season with these hives, learning alongside our bees, tending them faithfully, and waiting until the honey is truly ready before we harvest a single frame. When the time comes — and we will tell you exactly when on our Substack — this honey will be worth every moment of the wait.

Raw honey is alive in a way that processed honey simply is not. You may notice natural crystallization over time — this is a sign of quality, not spoilage. Simply warm the jar gently in a bowl of warm water and it will return to liquid. Never microwave raw honey or expose it to high heat — you'll lose the very things that make it extraordinary.

HOW TO USE IT: Spread it on warm bread fresh from the oven. Swirl it into your morning tea. Drizzle it over soft cheese on a charcuterie board. Stir it into salad dressing. Spoon it over vanilla ice cream on a summer evening. Or eat it straight from the jar — slowly, the way something this good deserves to be eaten.
